Cold Weather Dinner Ideas

I’ve been busy y’all. Both in the kitchen and with my notepad creating a printable product I am quite excited to share with you! It’s a mom’s practical guide to feeding a busy family and includes a detailed meal plan with delicious dinners that have been tested and are kid and husband approved, tips on how to adjust them for dietary preferences, and are all quick and easy to prepare. I’ve been working really hard to address the major pain points you’ve sent way when I asked your biggest dinner hurdles, and I’ve had the best time bringing it to life. I can’t wait to share it with you soon!

However, until then, I wanted to share some of the best winter meals we’ve been eating lately…

  • Fall Spiced Pumpkin Chicken Chili – This is a quick one to pull together and it such a cozy recipe everyone enjoys. I serve it with sour cream and usually make cornbread on the side.
  • Hamburger Salad – These are delicious, so if it sounds weird, don’t knock it until you try it. Layer romaine or iceberg lettuce (because you want a good, cold crunch) with hamburger toppings. My favorites are diced tomato, sliced pickles, sautéed mushrooms and onion, and roasted potatoes. Top with a chopped burger, mustard and ketchup.
  • Slow Cooker BBQ Pulled Pork piled into a bowl with roasted sweet potatoes, avocado, dill pickle kraut, and shredded kale and cabbage salad (that was from a bag from Whole Foods). The rest of the family eats theirs on a bun, but I think everything tastes better in a bowl! 

  • Lemon Garlic Baked Salmon, with garlic brown rice made in my rice cooker, and roasted Brussels sprouts with olive oil, salt, and garlic powder.
  • Marinated Chicken and Noodles, but served over Palmini angel hair noodles, with roasted broccoli and cauliflower on the side, with my go to- olive oil, salt, and garlic powder.
  • Steak fajita bowls – these were so good! I layered brown rice, Mexican Black Beans (that I also added pico into), veggies sautéed in olive oil, salt, cumin, and garlic powder, grilled flatiron steak, sour cream, guacamole, and my favorite thin and crispy chips from Late July.

  • Coconut Curry Zoodle Soup, but minus the zoodles and plus shredded chicken. I served it with steamed edamame and organic pot stickers that I got frozen from Costco (super easy to quickly boil). This was a big hit for the family!
  • Oven Baked Chicken Breast (it wasn’t my favorite flavor combo, but the rest of the family enjoyed it), steamed broccoli with herb butter, and a classic baked potato with sour cream, salt and pepper.
  • Super simple grilled chicken, with coleslaw (I shredded cabbage and carrots and added a little mayo, apple cider vinegar, salt, pepper, and a drizzle of honey), and tator tots from the freezer, and a dipping sauce of half buffalo and half ranch.
  • Pulled Pork in the Slow Cooker (I just used a shoulder roast and some BBQ seasoning- no liquid or sauces- and it cooked and shredded beautifully. I did this so we all could add the sauce of our choice- since I prefer some spice and the girls don’t), over brown rice, and cole slaw, plus a pickle.
